The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Pizza Hut, 2711 S Hazel St., Suite B. Date of construction inspection Dec. 1. No violations reported.


• Lybrand’s Bakery, 2900 Hazel St. Date of inspection Dec. 1. Food not in the original package should be labeled with the common name of the food (Not in compliance; repeat violation.) Plates should be stored covered or inverted to protect them from contamination (Not in compliance; repeat violation.) Bottom of prep cooler near grill needs to be cleaned (Not in compliance; repeat violation; corrected on site during inspection.) All lights in kitchen area should be shielded Not in compliance; repeat violation.)


• MR Petroleum, 3100 Hazel St. Date of inspection Dec. 1. Need paper towels at all hand washing sinks (Not in compliance; repeat violation.) Food in coolers and freezers should be covered to prevent contamination while being stored (Not in compliance; repeat violation; corrected on site during inspection.) Chicken in sink thawing is out of safe temperature range — must be 41 degrees F or below (Not in compliance; repeat violation; corrected on site during inspection.) Improper thawing procedures used; observed chicken sitting out in sink to thaw (Not in compliance; repeat violation; corrected on site during inspection.) Ice bags that contain ice bagged in store should have proper store identification on them (Not in compliance; repeat violation.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Tongs stored improperly (Not in compliance; repeat violation.) • Catering By Scott Ray, 9231 Highway 270, White Hall. Date of inspection Nov. 29. Observed rodent in dry storage room (Not in compliance; repeat violation.) Air vents on the outside of the vent hood need to be cleaned (Not in compliance; repeat violation.) Shelf under prep table needs to be cleaned (Not in compliance; repeat violation.) Floors under shelving and equipment need to be cleaned (Not in compliance; repeat violation.)


• Transformation Project, 1400 Centennial Lane, White Hall. Date of inspection Nov. 29. No violations reported.


• Areli’s, mobile, Hwy 270-65 Flea Market, White Hall. Date of inspection Nov. 29. Single service trays should be stored in original protective package or in another way to prevent contamination until used (Not in compliance; repeat violation; corrected on site during inspection.) Need test strips to test for sanitizer strength (Not in compliance; repeat violation.) Need running water before opening for business next (Not in compliance; repeat violation.) Ceiling vents need to be cleaned (Not in compliance; repeat violation.) No current permit posted (Not in compliance; repeat violation.)


• Leon’s Catfish, #18 Chapel Village. Date of inspection Nov. 29. All employee drinks in the food preparation area must have a lid and a straw (Not in compliance; repeat violation; corrected on site during inspection.) The food in the cooler was stored improper (Not in compliance; repeat violation; corrected on site during inspection.) TCS foods shall be thawed using an approved method (Not in compliance; repeat violation; corrected on site during inspection.) Observation: Need chlorine test strips to ensure proper sanitizing solution concentration (Not in compliance; repeat violation.)
