This week’s Recipe of the Week comes to us from Jo Buster of Heber Springs. "I have enjoyed this recipe for at least 20 years," said Buster. " It was given to me by a friend in Little Rock who said that it was comparable to a pie that they had at Wyatt’s Restaurant. Everyone wants to know what the ingredients are and are amazed when they find out one of  them is crackers. Hope you all will enjoy it as much as we have."

Company's Comin' Pie

3 egg whites

1/2 teaspoon cream of tartar

1 cup sugar

18 saltine crackers

1/2 cup chopped pecans

1 teaspoon vanilla

Beat 3 egg whites until foamy.

Add 1/2 tsp cream of tartar. Beat until stiff.

Add 1 cup sugar gradually. Beat until dissolved.

Fold in by hand: cracker crumbs, 1/2 cup chopped pecans, and 1 tsp vanilla.

Spread into a lightly greased pie pan. I use butter.

Bake 35 minutes at 300 degrees.

Let cool.
